Burning Barn Rum understands the significance of the craft movement, recognising the growing appreciation for sourcing, premium ingredients, and innovative production methods. Motivated by the tragic incident of their barn burning down, the brand embarked on a mission to craft an authentic offering tailored for rum connoisseurs. This adversity instilled in them a resolute determination to never compromise on quality and always strive for excellence in their pursuits.
Their process begins with the careful blending of the finest molasses-rich Column and Pot still rums sourced from the esteemed Diamond Distillery in Guyana. Utilising a combination of French Savalle, Wooden Coffey, and Double Wooden Pot stills, including the renowned Port Mourant, Burning Barn Rum achieves a distinct flavour profile. Following this, the rum undergoes maturation for two to three years in American oak casks, previously used to age Bourbon whisky, under the intense Caribbean heat. Inspired by the fire that ravaged their barn, Burning Barn Rum infuses their creations with unique flavour combinations. For their smoked rum, they cold smoke the spirit using wood from apple trees planted by their father over three decades ago. Similarly, the spices in their spiced rum are meticulously hand-roasted using whole ingredients on their farm. This journey of resilience and innovation has laid the foundation for Burning Barn Rum, as they eagerly anticipate what the future holds.
